Homemade Blueberry Waffles

I’m always looking for ways to add fruits and vegetables to our diet.  Sneak a little in here and a little in there and it really adds up.  Kurt loves everything made with blueberries.  To be honest, before we were married I really didn’t enjoy them that much.  Now I eat them by the handful and love tossing them into recipes like these homemade blueberry waffles.  They’re fresh and sweet and simply mixing a handful or two in your waffle or pancake batter adds a superfood punch.  And don’t forget the cinnamon and nutmeg.  They’re the perfect complement to give your waffles a richer flavor.  If you don’t have a waffle maker there’s your solution.  You can make them as pancakes (adjusting the recipe accordingly).  Or go ahead and use store-bought waffles and add your fresh blueberries on top.  The point is to add in that fruit anywhere you can.  This recipe is so easy and fun and when you’re done you have some gourmet waffles that would rival any restaurant.  The secret is using Krusteaz. They make the best product. Top with your favorite maple syrup, maybe a few more blueberries, powdered sugar, or even whipped cream.  If your house is anything like ours these go quickly.  I always make a double batch and refrigerate the left-overs for the next morning.  They toast up beautifully in the toaster oven.

Recipe for Homemade Blueberry Waffles
Ingredients:
  • 2 cups Krusteaz Buttermilk Pancake Mix
  • 1 ½ cups cold water
  • 1 egg, at room temperature
  • 2 tablespoons canola oil
  • ½ teaspoon ground cinnamon
  • 1-2 dashes ground nutmeg
  • ¾ cup fresh blueberries, and more for garnish 
  • Cooking spray, to grease waffle maker 
  • Maple syrup, as desired
  • Powdered sugar, optional
  • Whipped cream, optional
Directions:
Preheat your waffle maker.  It depends on your machine but I like to use medium to medium/high heat.  In a large bowl mix the Krusteaz Buttermilk Pancake Mix, water, egg, canola oil, cinnamon, and nutmeg together.  Gently stir in the blueberries.  When your waffle maker is preheated spray it with cooking spray to lightly grease it (both top and bottom grates).  Pour batter into waffle maker and cook with the lid closed until golden brown, about 3-5 minutes.  Plate and drizzle with your favorite maple syrup.  Add more blueberries, powdered sugar, and/or whipped cream as desired.
