It’s kind of like having dessert for breakfast. I love overnights oats and have tried many different kinds. This one’s an extra special treat when you're looking for something different than your typical berries and oats. The cinnamon, maple syrup, pecans, and shredded coconut go perfectly together. You can make a batch of four in under 10 minutes, then just grab and go in the morning. No cooking, no mess, no fuss. This recipe is dairy-free, vegan, vegetarian and free from unhealthy sugar, yet you’d never know it, because it’s nice and sweet. I also make mine gluten-free by using Bob’s Red Mill GF rolled oats. Note: This recipe is for a single serving. I quadrupled it.
