Who doesn’t love a good app? The kind when you’re out at a party and you see those pigs in a blanket (one of my all-time faves) on a platter and you’re like, "Score! I can’t wait to eat a dozen of those!" Or when you see a new appetizer that you've never tried before that looks mouthwatering on the plate and you’re like, "Those look heavenly and I can’t wait to try them!" And when you do, they’re so good you kinda buckle at the knees a little. Your inside voice takes over, "How can I sneak back to that table to grab a couple more? I sure hope no one notices how many of these I’ve consumed tonight." We’ve all been there, haven’t we? This is an app I tried at my neighbors but I didn’t think they'd be that great because let's be honest they’re so healthy. Boy was I wrong. So simple, three ingredients, and they only take five minutes to make these cucumber hummus bites are out of this world. Get yourself a nice fresh cucumber, preferably English because you don’t want a lot of seeds. You can certainly use your favorite hummus but I think the roasted red pepper gives it a great flavor. And the Trader Joe’s Everything But the Bagel Sesame Seasoning is the fun in every bite of this app. If you don’t have Trader Joe’s you can always make your own blend with white and black sesame seeds, coarse salt, garlic, onion, and poppy seeds. This appetizer is light, crisp, flavorful, and I could end up nearly eating an entire cucumber all by myself this way. Talk about getting my hydration for the day. Next time you’re hosting a party throw these guys together. I’ve even made them for a light and healthy lunch.
Recipe for Cucumber Hummus Bites
Adapted from The Melon Ball
Ingredients:
1 cucumber, sliced in ¼ inch rounds
Sabra Roasted Red Pepper Hummus
Trader Joe’s Everything But the Bagel Sesame Seasoning
Instructions:
Place cucumber slices in a single layer on a platter.
Using the small side of a melon ball scooper, place a scoop of the roasted red pepper hummus on each cucumber slice. You can also eyeball it with a teaspoon. You just don’t want to overdo it on the hummus. Stick to a teaspoon. Sprinkle each slice with a couple dashes of the Trader Joe's Everything But the Bagel Sesame Seasoning and serve.
