Green Beans Sauteed in Garlic

Greens, greens, I need more greens!!!   If you're like me you're eating a lot of the wrong foods these days.  Lots of carbs and lots of snacks.  I had to get serious today and make a BIG batch of green beans.  I make these often because our whole family loves them, and they're so simple and easy to make.  Green beans are one of those veggies that pretty much go with anything on your dinner plate, so the next time you're food shopping pick some up!  
Recipe for Green Beans Sauteed in Garlic:
Ingredients: 
  • 2 pounds green beans, ends trimmed 
  • 2 tablespoons olive oil 
  • 2-3 garlic cloves, minced (I love garlic, so I use 3) 
  • salt 
  • freshly ground black pepper 
  • Optional toppings:  lemon zest and/or red pepper flakes
Instructions:
  1. Start by blanching your green beans.  Bring a large pot of salted water to a boil.  Add the green beans and boil until bright green and tender, roughly 3-4 minutes. 
  2. Meanwhile, create an ice bath.  Fill a large bowl with water and lots of ice.  
  3. When the beans are done, drain them and quickly transfer them to the ice bath.  This stops them from cooking.
  4.  Pat them dry with paper towels, getting most of the water off. 
  5. Heat a large skillet over medium heat.  Add the olive oil.  Add the garlic and saute until fragrant, about 30 seconds. Add the beans, stirring to coak with the oil and saute until heated through about 5 minutes.  Stir periodically so that they don't burn.  Season with salt and pepper and any optional toppings.
