Hard Boiled Eggs in the Instant Pot

What's the best way to make hard-boiled eggs?  I bet you've asked that question once or twice before when you're standing over an egg trying to peel it, cursing at the tiny pieces that won't seem to come off.  That's always a great question right about that time.  So let me share the best method I discovered when we were making them to dye at Easter last year.  The Instant Pot!  Making your hard-boiled eggs in the Instant Pot has two huge benefits.  1)  Your house doesn't get that awful sulfur rotten egg smell.  I love hard-boiled eggs, but who wants a smelly kitchen?  And 2) the eggs are easy to peel.  I found this recipe on Pinterest and tried it once, and I'll never look back.  Mark my words, I'll never boil eggs in a pot of water again.  I hope you have an Instant Pot to try this too.  Use the rack that comes with your Instant Pot, and put it in the bottom.  Add a cup of water and your eggs (single layer, not to overcrowd them).  Put the lid on, turn to sealing, and cook on high for seven minutes.  Do a quick release then transfer your eggs to an ice bath for five minutes.  That's it!  Whether you're dying eggs for Easter or not, hard-boiled eggs are a quick easy snack, and they're loaded with protein.  Drew loves to take them to school for a snack, and I love to use mine in egg salad.  Either way, happy eggs, and Happy Easter!
