Instant Pot Chicken and Gravy

Tonight I used one of my FAVORITE kitchen appliances, the Instant Pot.  Because it’s so quick and easy, I’m always looking for new recipes that I can make in it.  As I was catching up with an old friend, Kathy, she shared that this is one of her family favorites.  I can see why.  I CANNOT BELIEVE how juicy the chicken turns out.  The gravy is good, but it’s the chicken that makes this recipe a success.  Juicy?  Yes.  Moist?  Ah-Ha.  Tender?  Yeah, baby.  We served it with mashed potatoes and greens beans.  I only wish we had a bigger bird.  It was so good, I want more leftovers.  By the way, don’t let a whole bird intimidate you.  I did for years and would only cook with boneless skinless chicken breasts, but it's when you use a whole bird like this that you get tremendous flavor and can take advantage of making a really nice gravy.
