Add more merry to your Christmas morning.  Take a traditional mimosa and give it a festive twist by using cranberry and pineapple juice.  Then top it off with red cranberries and a sprig of green rosemary.  I'm not sure which is more fun, drinking it, smelling the aroma of the amazing rosemary in every sip, or simply admiring all the Christmas a glass can hold.  I've made mimosas every Christmas morning for a handful of years now.  Only I drink them, but who cares?!  It's something I look forward to every year.  I'm in my Christmas PJs, with my family I love, might have a little bedhead, opening gifts, and sipping spirits.  It's a perfect Christmas morning if you ask me.  These are quick and easy to make and add so much merry to your morning.  At the end of this very challenging year, I wish you all a very happy and healthy holiday!  
Recipe for Merry Mimosa
Ingredients:
  • ½ glass chilled Verdi spumante, prosecco, cava, or inexpensive champagne   
  • ¼ glass cranberry juice
  • ¼ glass pineapple juice
  • freshly squeezed lemon, to taste
  • fresh cranberries, for garnish
  • rosemary sprigs, for garnish 
Directions:
Fill a champagne flute halfway with the spumante.  Add the cranberry and pineapple juices.  Add a squeeze of lemon to taste.  Garnish with cranberries and a rosemary sprig.  Get your Merry on!
