Sauteed Spinach with Lemon

I love it when my garden's in season to be able to do garden to table posts. Today we picked some GINORMOUS spinach and sauteed it. Check out the pics below to see just how big these leaves got. I wish I could enter them in a county fair agriculture contest. They're bigger than my hand.

I like spinach in a salad, but my favorite way to eat it is cooked. If you’d like to add more fiber or iron to your diet or simply just eat more veggies you’re gonna want to try this. Lemon zest and freshly squeezed lemon help to really bring out the flavor. After it's plated, you can taste it and squeeze a little more lemon if you'd like. You can add some crushed red pepper flakes for a little bit of heat. Or one of my faves, you can add some shaved parmesan or grated parmesan. All really yummy options. This is a GREAT way to enjoy spinach, so pump up your superfoods and give it a try!

Recipe for Sauteed Spinach with Lemon:

Ingredients:

  • 1 bunch fresh spinach, washed and pat dry

  • 2 tablespoons olive oil

  • 2 cloves garlic, sliced

  • 1 lemon, zested and quartered

  • sea salt

  • freshly ground black pepper

Directions:

Heat olive oil in skillet over medium heat. Add garlic and saute until fragrant and light brown, about a minute. Add spinach, salt, pepper, and lemon zest. Cook it until wilted stirring frequently so the leaves don’t burn. This will only take a couple minutes. Do not over cook. Squeeze a quarter of the lemon into the spinach. Plate and serve.
