Eggplant Pizza

That’s right, just a short week later of discovering Antimo Caputo Italian flour, we were hooked!  We were back at making more homemade pizza.  Tonight we topped them with some eggplant (which I effortlessly cooked in the air fryer), red pepper, and red onion.  I also like to sprinkle a little garlic powder, salt, and pepper on the crust before I bake them to give the crust a little extra flavor.  I have to thank Kurt for gifting me the air fryer for Christmas.  We’re always trying to add as many veggies to our diet that we can.  Generally, and depending on the time of year, I grill, saute or roast them, but who doesn’t love the taste of fried food (that actually isn't fried)?!  So far, we’ve only made eggplant and french fries in our air fryer, but I'll be trying a lot more out in the near future.  An air fryer is so quick and easy, and I love that it’s healthy but tastes so sinful.

Some notes about the recipe: I add two more ingredients to my dough. First I whisk 1 1/2 tablespoons sugar into the flour. Then when you’re adding the yeast mixture to the flour, I add 1 1/2 tablespoon of olive oil.

Since this recipe comes off a pizza oven sight their directions tell you to bake it in your pizza oven. I don’t have a pizza oven (but I sure wish I did). I simply bake mine at 475 degrees for 18-20 minutes or until the cheese has melted and the crust is golden brown. I do use a pizza stone, but a regular cookie sheet works just fine.

This recipe is specifically for this brand of Antimo Caputo Chef’s Flour Tipo “00”. Results may vary if another brand or type is used.

How to Make Eggplant in the Air Fryer:

Peel and slice one whole eggplant into 1/4 inch slices. Salt them and spray them lightly with olive oil cooking spray on each side. Cook them at 300 degrees in your air fryer for 10 minutes, flipping them halfway through. When they’re done, check them with a fork. If they’re tender and browned, they’re done. Cut into smaller pieces to top your pizza. Depending on the size of your air fryer, you’ll have to work in batches. Mine fits four slices at a time. It will take several rounds to make a whole eggplant, but I guarantee its worth the wait.
