White Lentil Risotto

Accompanied by broccolini and walnut currant agrodolce, this risotto was sweet and savory.  One of my top faves to order out, I’ve never made risotto from scratch. (Cheating with a box doesn’t count).  I have to say it’s well worth the 45 minutes standing over a saucepan stirring in the broth.  This was a recipe from Purple Carrot.  Kurt and I have used meal-kit services on and off for several years.  They’re a great solution to anyone bored with the same old recipes.  They also make shopping easy since everything gets mailed right to your door.  Often, you can choose less complicated recipes which end up giving you a great meal while not sacrificing a lot of prep and cook time.  And most of them can be tailored to special dietary needs.  If you've tried a particular meal-kit service that you've really liked, share it with me.  I use them sporadically, mainly to explore and mix things up a bit.  Back in the day, there weren't many to choose from with Blue Apron and maybe Marley Spoon, but they've become so popular that its hard to keep up with them.
